Slice zucchini into thin sheets using a mandoline.
Sprinkle slices with salt and let them sit for 10 minutes to release moisture.
Pat dry with paper towels. Optionally, pre-bake at 400°F (200°C) for 5 minutes to reduce moisture.
Heat olive oil in a skillet over medium heat.
Add onion and cook until soft, 2–3 minutes.
Add garlic and sauté 30 seconds.
Add ground beef and cook until browned.
Stir in marinara, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
In a bowl, mix ricotta, egg, Parmesan, and garlic powder.
Spread a thin layer of meat sauce in the baking dish.
Add a layer of zucchini slices.
Spread ricotta mixture, then more meat sauce, then mozzarella.
Repeat layers until all ingredients are used.
Top with mozzarella and Parmesan.
Bake at 375°F (190°C) for 25–30 minutes until golden and bubbly.
Let rest 10 minutes before slicing. Top with fresh basil.
