This Italian beef ragu is rich, hearty, and packed with deep tomato flavor. Tender beef simmers slowly until it becomes wonderfully soft and easy to shred.
Served over zucchini noodles or your favorite low-carb pasta, it makes a cozy keto-friendly dinner without feeling complicated. The sauce is thick, savory, and perfect for a family meal or easy leftovers.
Traditional beef ragu is usually served with regular pasta, which is high in carbohydrates.
For a keto version, use zucchini noodles or a low-carb pasta alternative instead.
The ragu itself uses beef, tomatoes, herbs, and vegetables without added sugar.
Keep the tomato products moderate and check labels to keep net carbs lower.
With a low-carb serving base, this recipe can fit into a keto meal plan.
I love this recipe because the sauce becomes richer as it slowly cooks.
The beef turns tender and blends beautifully with the tomato sauce.
It also gives me easy leftovers for another dinner during the week.
For a lower-carb meal, I simply serve it over zucchini noodles.
Italian beef ragu works beautifully for cozy weeknight dinners, Sunday family meals, and meal prep. It is also a practical choice when you want a hearty keto dinner that can be prepared ahead. Freeze the sauce in portions and pair it with fresh zucchini noodles whenever needed.

Beef chuck roast. This is my favorite cut because it becomes tender and shreddable during slow cooking. Boneless beef shoulder also works well.
Olive oil. It helps brown the beef and adds a smooth base to the sauce. Use a mild olive oil if you prefer a lighter flavor.
Yellow onion. Onion gives the ragu a naturally sweet and savory foundation. Keep the amount moderate for a lower-carb version.
Celery. Celery adds freshness and savory flavor without relying on higher-carb vegetables.
Garlic. Fresh garlic gives the sauce a warm, aromatic flavor that works beautifully with beef and tomatoes.
Tomato paste. Tomato paste concentrates the tomato flavor and helps make the finished ragu thick and rich.
Crushed tomatoes. They create the main body of the sauce. Choose a variety with no added sugar when possible.
Beef broth. Broth keeps the sauce moist while the beef cooks. Use a low-carb broth without added sugar.
Dry red wine. A small amount adds depth and balances the tomato flavor. For a wine-free version, replace it with additional beef broth.
Italian seasoning. This simple blend brings oregano and herbs into every spoonful.
Parmesan cheese. Freshly grated Parmesan adds a salty, nutty finish. It can be skipped if you want a dairy-free version.
Fresh parsley. Parsley brightens the rich sauce and gives the finished dish a fresh contrast.
Zucchini noodles. These are my preferred keto-friendly base for the ragu. Low-carb pasta can also be used according to its package directions.

Step 1- Pat the beef chuck dry, then season it generously with salt and black pepper.
Step 2- Heat olive oil in a heavy Dutch oven over medium-high heat. Brown the beef for 3–4 minutes per side, then transfer it to a plate.
Step 3- Lower the heat to medium. Add the onion and celery, then cook for 4–5 minutes until softened.
Step 4- Add the garlic and tomato paste. Cook for 1–2 minutes, stirring often, until the tomato paste darkens slightly.
Step 5- Pour in the red wine and scrape the browned bits from the bottom of the pot. Simmer for 2–3 minutes.
Step 6- Add the crushed tomatoes, beef broth, and Italian seasoning. Stir well, then return the browned beef to the pot.
Step 7- Bring the sauce to a gentle simmer. Cover partially and cook on low heat for 2½–3 hours.
Step 8- Check the beef after 2½ hours. It should pull apart easily with a fork and the sauce should look thick and rich.
Step 9- Remove the beef and shred it with two forks. Return the shredded beef to the sauce and simmer uncovered for 10–15 minutes.
Step 10- Prepare the zucchini noodles separately. Cook them briefly over medium heat until just tender, then drain excess moisture.
Step 11- Spoon the Italian beef ragu over the zucchini noodles. Finish with Parmesan and fresh parsley.
Pro Tip: Keep the sauce at a gentle simmer rather than a rapid boil. This helps the beef become tender without drying out.
Store leftover Italian beef ragu in an airtight glass or food-safe container in the refrigerator for up to 4 days. Keep the ragu separate from zucchini noodles when possible to prevent excess moisture.
For longer storage, freeze the cooled ragu in individual freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator, then reheat gently in a saucepan over medium-low heat.
For the best keto-friendly texture, prepare fresh zucchini noodles when reheating frozen ragu.
This Italian beef ragu combines tender beef with a rich tomato and herb sauce. Slow cooking creates a thick, savory texture and deeply developed flavor. Serve it over zucchini noodles for a comforting low-carb dinner.
