This easy Eggplant Caponata is packed with tender eggplant, juicy tomatoes, peppers, olives, and a bright splash of vinegar. The vegetables become rich and silky while every bite gets a delicious sweet-tangy finish. It is a comforting Italian-inspired dish that works beautifully for weeknight dinners, meal prep, or a simple side. With a few smart swaps, this keto and low-carb Eggplant Caponata keeps all the classic flavor without unnecessary added sugar.
This version can fit a keto lifestyle when portion sizes are considered. Eggplant, olives, tomatoes, and peppers provide the main carbohydrates, while fiber helps lower the net-carb count. Traditional caponata often contains added sugar, so this recipe skips it or uses a keto-friendly sweetener instead. Check your tomato products and sweetener labels for added sugars. For a stricter keto plan, keep the serving size moderate.
I love this recipe because the vegetables turn wonderfully tender without becoming completely mushy.
The vinegar adds a bright contrast to the rich eggplant and tomatoes.
It also tastes fantastic the next day, which makes leftovers especially easy to enjoy.
Best of all, one skillet gives me a flavorful dish with very little cleanup.
Eggplant Caponata is ideal for easy weeknight dinners, meal prep, Italian-inspired meals, family-style sides, and keto-friendly menus. It also works beautifully as a make-ahead dish for gatherings. Serve it warm, at room temperature, or chilled depending on the occasion.

Eggplant. This is the heart of the dish. Choose firm eggplants and cut them into even pieces so they cook consistently.
Tomatoes. They create the saucy base and add natural sweetness. Use crushed or finely chopped tomatoes without added sugar.
Red bell pepper. I like the gentle sweetness and color it brings. Green pepper can also work if you prefer a sharper flavor.
Onion. Onion builds the savory foundation. Slice it thinly so it softens nicely with the other vegetables.
Garlic. Fresh garlic adds a warm, aromatic layer that works especially well with eggplant and tomatoes.
Olives. They bring a salty, briny flavor that balances the sweetness of the vegetables. Green or black olives both work.
Capers. Capers add another punch of salty, tangy flavor. Rinse them briefly if they are packed in a very salty brine.
Red wine vinegar. This gives caponata its signature tang. Add it toward the end so the flavor stays bright.
Olive oil. Olive oil helps brown the vegetables and gives the finished dish a smooth, rich texture.
Fresh parsley. Parsley adds freshness right before serving. Basil can also be used for a slightly different Italian-style finish.
Keto-friendly sweetener. Traditional caponata often uses sugar. A small amount of a suitable keto-friendly sweetener can provide similar balance without regular sugar.
Dried oregano. Oregano adds a warm Mediterranean note. Use it lightly so it supports rather than dominates the vegetables.

Step 1- Cut the eggplant, onion, bell pepper, and tomatoes into bite-sized pieces. Mince the garlic and set the vegetables aside.
Step 2- Heat olive oil in a large skillet over medium-high heat. Add the eggplant and cook for 7–9 minutes, stirring occasionally, until browned and tender.
Step 3- Transfer the eggplant to a plate. Add the onion and bell pepper to the same skillet and sauté for 4–5 minutes until softened.
Step 4- Stir in the garlic and cook for about 30 seconds. Keep the heat moderate so the garlic does not burn.
Step 5- Add the tomatoes, olives, capers, oregano, and cooked eggplant. Stir everything together and reduce the heat to medium-low.
Step 6- Simmer for 10–12 minutes. The tomatoes should thicken while the vegetables remain tender instead of completely falling apart.
Step 7- Stir in the red wine vinegar and keto-friendly sweetener, if using. Taste and adjust the salt, pepper, and vinegar.
Step 8- Cook for another 2–3 minutes. Remove from the heat once the mixture looks thick, glossy, and well combined.
Step 9- Let the caponata rest for at least 10 minutes. Finish with fresh parsley and serve warm or at room temperature.
Pro Tip: Don't rush the eggplant browning stage. A good golden-brown surface adds much more flavor to the finished caponata.
Store leftover Eggplant Caponata in an airtight glass or food-safe container in the refrigerator for up to 4 days. Allow it to cool before sealing the container, but avoid leaving it at room temperature for an extended period.
For longer storage, freeze cooled caponata in freezer-safe containers for up to 2 months. Leave a little room for expansion. Thaw overnight in the refrigerator, then gently reheat in a skillet over low to medium heat.
The recipe remains keto-friendly after storage as long as you use the same low-carb ingredients and avoid adding sugary sauces during reheating.
This Eggplant Caponata combines tender vegetables with tomatoes, olives, capers, and herbs. Red wine vinegar gives the dish its signature sweet-tangy character. It is an easy keto-friendly side that works beautifully for dinner or meal prep.
